Veg Fried Rice, How to Make Fried Rice

Mixed with flavoured rice and with very fresh vegetables, onion, seasoning and spices makes this classic veg fried rice recipe incredible. This dish must be credited in one of the most favourite Chinese inspired recipes. The recipe for making veg fried rice is not only very easy and requires a few steps only. But also, the amazing fact about vegetable fried rice is that it is completely vegan dish and also delicious to eat. And one of the greatest things about veg fried rice is you can make it gluten-free just by simply omitting some ingredients like soy sauce or using tamari.

How to make Veg Fried Rice:

Preparing Rice

1. The recipe surely begins with cooked rice. And it is obvious that we need the rice well-cooked for making a great vegetable fried rice. The recipe needs One Cup of basmati rice (190 to 200 grams), that is needed to be soaked in water for 30 minutes. Then drain the water and set the soaked rice aside.

You can also work with good quality and aged long-grain rice which will also work instead of basmati rice. Jasmine rice can also work but in small quantities.

2. 4 to 4 ½ cups of water can be added in a large pot with half teaspoon salt, with two to three drops of any cooking oil (toasted sesame oil). Now you can set it over on the stovetop on high heat.

3. Boil the water until it gets to a full boil.

4. Remember we have already soaked and drained out basmati rice. Add that rice here.

5. And now you need to simmer the rice in the uncovered top in a range of medium to medium-high heat.

6. Cook the rice and keep checking until it’s just about cooked. Always remember that any rice dish is not going to be the best one if it’s overcooked. So, always keep this important step in mind and keep checking the rice and don’t overcook.

Completely cooking the rice or being overcooked can lead the rice grains to break, while they are being stir-fried.

7. Now you need to cool the rice in room temperature. Use a colander to quickly strain those rice. Though refrigerating those rice for at least half an hour will also work. But in the case where you refrigerate the cooked rice, please remember to cover it.

8. Let us teach you a trick to stop rice from cooking. After you see the rice is cooked enough, at this point you can rinse the rice with fresh water. It will cool down the grains and the rice will stop being cooked. Please ensure that every rice grain is cooled. Use your hand to give a gentle stir to the cooked rice grains. After rinsing, thoroughly drain the rice.

9. Cover the cooked rice and keep it aside to cool down more.

Preparing Vegetables

10. While cooking rice it will take much time as we said earlier. So meanwhile, chop down those veggies. The French beans are tougher than any other mixed vegetables so, it is recommended if you chop them very finely.

Now let’s continue with our recipe for the marvellous fried rice. So, as we are chopping down vegetables, you would be needing ¼ cup of each ingredient that we are listing below. And please make sure that you have finely chopped those:

  • Carrots
  • French beans
  • Finely chopped white Onions (Scallions)
  • Capsicum or bell Peppers. (Now, this is of course on your preference – red, green or yellow)

Now you can add about 1 cup of chopped button mushrooms. That will add some great umami flavour to your rice.

There are also some things that you can include here that can mix some more authentic Chinese-flavour like one tablespoon of Celery (Finely chopped). If you have cabbage with you, then you can also add ¼ to ½ cup of chopped cabbage.

Stir Frying Vegetables

11. Heat 3 tablespoons of cooking oil of your preference in a deep skillet or a wok. Fry for a while with a whole star anise. Keep frying until you smell, the oil become generating a fragrance.

You can skip adding star anise if you don’t have it. Then you should directly skip to step 12.

Tip: For stir-frying we recommend you to get a good, trusted, heavy pan, wok or skillet. So, the fresh vegetables don’t get stuck or get burnt, when you’re frying them at medium to high heat. Use oils which have nearly neutral taste and flavour.

12. Now you need to add one teaspoon of garlic (Finely chopped). You don’t need to cook for long as you don’t need to cook the garlic till it get brown or burnt. Cook for until a few moments only.

13. Mix the chopped spring onions. Now just keep them flying for about a minute or two in medium heat.

14. Now French beans will be mixed here. You can choose if you want to add the chopped beans before onions whether you want it more soft bean texture. So, it’s completely up to you.

15. Keep cooking for two to three minutes over a medium to medium-high heat. Make sure that both French beans and onions are stir-fried well enough.

16. Now this is getting interesting as you are adding all those finely chopped vegetables which includes mushroom, celery, carrots and all. And now you can increase the heat high too, for cooking better all the ingredients.

17. You have to cook the vegetables for about four to six minutes so every vegetable is uniformly cooked. You can make it sure that every vegetable is uniformly cooked by continuously tossing and stirring at the time of frying.

Making vegetables tastier involve them getting cooked and fried, yet they need to have the crunch in them.

Add Seasonings

18. Add 3 tablespoons of soy sauce when you see the vegetables are cooked well.

The amount of soy sauce depends on your preference. So, if you want, you can add less amount of soy-sauce. It is recommended to use naturally brewed soy sauce or tamari.

Though if you don’t want or like soy sauce, just can simply omit it from adding in the dish.

19. Taste that how much taste your dish has grown. Then add ½ teaspoon of black pepper and some salt as your preference. But please keep a measure don’t make the dish too much salty.

Keep in mind that the fried rice has become a bit salty if you already added soy sauce. So, before adding some additional salt keep that in mind. That’s why we recommended you to check how is your dish tasting.

20. Now mix everything well so it combines the flavours.

Make the Veg Fried Rice

21. We are very near to finishing up our whole cooking process. So, in this step we are ready to put all the ingredients together and make the veg fried rice. To the wok or the skillet whatever you are using to cook the veggies, add the cooked rice in it (make sure that the rice is cooled). Use a cup and add the rice 1 Cup at a time or something like that.

22. Keep the heat medium so you are not cooking the rice that much, but in this step, you need to mix all the ingredients together. Keep gently stirring and folding the cooked rice into your mixed vegetables with the spoon or spatula.

23. Now for a couple of minutes keep turning and mixing those fried vegetables and rice in the heat.

24. Now to incorporate your rice with garnish of finely chopped spring onions, you can spring them on the rice or you can also mix them in.

25. Now you have prepared your favourite meal and you can serve it as a light dish. Also, you can enjoy it with other dishes that you like.
